The beauty of a cooperative business is that every employee is incentivized by having a stake in the game, and at Circus Cooperative Cafe, that’s working very well. It has a range of breakfast and lunch sandwiches plus baked goods in a cozy Putnam Avenue space, and the Green Scare is an aptly named and delicious choice for a filling lunch. It’s a zhoug chickpea salad wrap with cucumber and arugula. Zhoug is a Yemeni condiment made with cilantro, garlic and olive oil, and in the Green Scare, it’s the star of the show. The Circus version, made in-house, includes jalapeños that add a nice kick to an already punchy sauce. The brightness of the zhoug elevates the chickpea salad to something unique, and the cucumber and arugula in the wrap provide the perfect cooling complement to temper the strong zing of raw garlic.

Wow, gotta try this one, and I’m happy to read online that vegan mayo is used (vegan mayo is easily made by whipping the liquid chickpeas are cooked in with oil, lemon juice and seasonings). By the way, that’s one sharp knife to have sliced through every chickpea rather than moving them aside. Reminds me I need to get my knives sharpened…
