Opened last week, Rebelle Artisan Bagels comes to Kendall Square from Providence, Rhode Island, where its owner Milena Pagán settled after graduating from MIT. The menu has all the usuals plus some more out-of-the-box flavors; I got a sesame bagel with charred scallion cream cheese, and I really enjoyed it. The char added a real depth of flavor to the cream cheese (thank you, Maillard reaction!), and the bagel itself was decently good (about on par with what you can expect in this non-bagel city). But I had a complaint: The bagels come uncut and the cream cheeses come on the side. I’m not usually whiny about the way food is served, but when I go to a bagel shop, I want my bagel cut and my cream cheese spread. It’s a small detail, yes, but it’s the kind of thing that would take my opinion of Rebelle to great from good.
