Vinal Bakery bills itself as a “New England bakery specializing in English muffins.” I love an English muffin, and actually think they tend to be way underrated, so I decided to try Vinal’s version. I ordered the Miss Maple sandwich, an over-medium egg and cheddar cheese on an English muffin with maple butter – and wow. It’s true that once you try a homemade English muffin, the store-bought ones don’t even begin to compare. Vinal’s English muffin was thick and fluffy, with a light, airy texture and a perfectly soft bite. It would have been great on its own, toasted with butter (which is on the menu and available to order), but the sandwich elements only made it better. The egg was expertly cooked, with a drippy yolk that was just the right amount of runny, and the maple butter added an excellent sweet-and-salty flavor. I will hurry back.
