One of my favorite parts of exploring different cuisines is getting to know what kind of fried, artery-clogging bites they have. When I sat down at Nirvana and saw they had fried paneer, I was excited by what sort of indulgent snack would come. The result was a little underwhelming. The paneer cheese had settled into a rubbery texture, and the fried chickpea-batter coating lacked crispness. The menu advertises this dish as “spicy,” but for my palate it was disappointingly bland. It was fun to mix and match with the different chutneys delivered to the table, but overall the appetizer left a lot to be desired. A little optimization of the frying and a little kick of spice added to the chickpea might take this dish a long way. I’m nothing if not faithful to our local Cambridge eateries and am eager to one day give this a second try.
