A few weeks ago, I snacked on 1369’s koji egg sandwich, an ostensibly simple egg and cheddar sandwich that is actually a sneaky standout thanks to the addition of koji caponata, a sweet and salty condiment of 1369’s own invention. Snack could have its own breakfast-sandwich-with-cool-condiment spinoff, there are so many to try. This week, I went for the Classic Jumbo sandwich from Bagelsaurus, with an over-medium egg, cheddar and mustard butter. Mustard butter is exactly what it sounds like, but Bagelsaurus’ version tasted even better than I expected: The richness of butter pairs perfectly with the depth of flavor in mustard. It’s already a good sandwich – over-medium egg (soft without being too runny) and cheddar (sharp and well-melted) on a bagel of choice – but the mustard butter takes it over the edge to great. The everything bagel, seeded abundantly and with flaky salt, is a particularly good vessel.
