Saus is a burger-and-fries counter-service joint in downtown Boston, but its second location in Bow Market has a twist: Its menu is meatless, with vegetarian-ized burgers, sandwiches and chicken nuggets. I tried the poutine – fries topped with miso mushroom gravy and cheese curds – and was seriously impressed. The crispy fries provided a perfect base for the gravy, which was thick, rich, deeply flavorful and surprisingly meaty. The umami of the gravy mixed nicely with the saltiness of the fries, and a sprinkling of green onions on top helped cut the richness. The cheese curds left a little to be desired, but the fries and gravy were so good I didn’t really care. This was a warm, satisfying take on the Canadian import that left me feeling truly satiated (and ready for a nap), and the generous portion felt extremely worth its price. This is a can’t miss at Bow Market!
