One of the Bow Market restaurants, Taquisimo, is all about its Tijuana-style birria: beef cooked slowly in a consommé to yield exceptionally tender and flavorful meat. Birria, which seems to have skyrocketed to stateside popularity recently, can sometimes taste sort of just… like beef. Not Taquisimo’s. I tried the taco birria and was blown away by how delicious this bite was. The meat was incredibly tender and deeply spiced without being spicy; a light melting of cheese added flavor while still letting the meat shine; and a sprinkling of chopped onions and cilantro freshened it up a bit. The three elements were balanced perfectly. Served with a side of consommé for dipping, this taco was truly one of the best I have had. Taquisimo is absolutely the real deal, and while $6 might be a little much for a single taco, this was so good I wasn’t complaining.
