Chewy with a delicate crust, the traditional pão de queijo puts the dough in Bōm Dough. The Inman Square cafe offers multiple versions of the Brazilian gluten-free cheese bread, including guava and doce de leite; I tried the traditional, enhanced with a side of hot honey butter. The queijo’s simplicity invites diners to appreciate the beauty of salt and fat, texture and temperature. Its rich foundation makes you want to come back for more, and spiced honey butter melting across it creates a savory and sweet combination. Served hot and at a relatively low price, this small snack lives up to the cafe’s name (Bōm meaning “good” in Portuguese). The only downside is that it might leave you hungry for more. The menu lists pão de queijo as a “choose your dough” sandwich option, and a sandwich with these as the bread sounds like pure midnight snack fantasy.
