I never thought of feta as being divisive like cilantro, but my counter help at Cava tried to steer me away from the Mediterranean chain’s Crazy Feta dip, which whips the cheese with jalapeño, onion and olive oil. I love feta, and got a container ($4.25) as a complement to the signature pita chips – six sort of focaccialike triangles, slightly crisped, browned and salted and yet still chewy and delicious ($2.75). The warning is understandable, I guess, because the Crazy Feta has a fairly strong taste. It’s sharp and cool, really swimming with the brined, soft sheep (and sometimes goat) cheese, and slightly chunky bits of the vegetable. Most restaurants give cause to complain about a mismatch of dips and their vessels, like too many chips, not enough salsa, but Cava has matched sizes perfectly to allow for indulgent scoops of schmear that run out as the pita chips do.
