Nothing says summer to me like the first bite of a ripe peach, and the Kimball Fruit Farmโ€™s are the best of the best: fragrant, fuzzy and so full of juice you have to bend over to take a bite. The fruits are picked when theyโ€™re a beautiful orange-red, a few days before theyโ€™re completely ripe. This means they donโ€™t get bruised on the way to the market, but youโ€™ll have to wait a day or two for peak flavor. A misguided few might claim that this wait disqualifies it as a snack โ€“ย but those benighted souls will change their tune happily at the first bite into a soft, deliciously juicy peach the next day. Fortune may favor the bold, but peaches favor the patient. In this hot steamy weather, these are one of the most refreshing and satisfying snacks I know.
