I have featured a few different breakfast sandwiches in the Snack because I love trying reimagined versions of the classic combination: eggs, bread and cheese. The classic jumbo from Bagelsaurus (with mustard butter) and the koji egg sandwich from 1369 Coffee House (with koji caponata) were excellent. At Gufo, which is a full-service Italian restaurant by night and a café by day, that special element is a Calabrian chili mayo that packs an impressive punch and adds a bright richness. The fact that my favorite part of the sandwich was a condiment is a testament to its impact. The rest of the sandwich consisted of a fried egg with a perfectly runny yolk, melted fontina, crispy bacon and arugula that had been just softened by the heat from the egg. It was all packed between the biggest English muffin I have ever seen, clearly homemade and absolutely delicious.
